10 Min. Semi-Homemade Pizza

Okay, I don't talk football, I don't watch football, I don't even play fantasy football despite the jeers of my coworkers; however, everyone seems to have football on their mind, even the Diet Dr Pepper can I'm sipping from has fake football laces printed on it! Either way, here is a recipe for a favorite pizza I make all the time that will impress your guests and only takes about 10 minuets to prepare!


Sorry, no step by step photos.....I didn't think to take photos of those steps!

Ingredients (per pizza)

1 Store bought pre-baked pizza shell (any brand, I like the thin and crispy varieties)
1/2 cup (more or less to taste) Sweet Baby Ray's Sweet and Spicy BBQ Sauce
1 cup of shredded taco blend cheese with seasoning
4 to 6 ounces bit sized pieces of cooked chicken--either leftover, or the grilled sliced chicken breasts in the store, or a rinsed and well-drained can of chicken. 
1 - 2 Sliced shallots or 1/2 a small mild onion
Extra Virgin Olive Oil

First things first--preheat your oven to 450 F.

2. Brush your empty pizza shell with a bit of EVOO as Rachael Ray would say--this helps the BBQ sauce spread evenly.
3. Spread the BBQ sauce evenly over the crust
4. Sprinkle evenly with cheese
5. Add chicken pieces
6. Top with sliced shallots or onion

After you've done this, the oven should be preheated--slide your pizza directly onto the middle rack (no pan) for best results--use a pan if you like a chewier crust! Turn the heat down to 425 F and bake for 5-7 min. or until the cheese is melted and the crust is slightly browned.
Remove from oven, slice and serve.

I told you this was quick and easy!  


I served some fried green beans with this as well--I picked these up in the froze food section of the grocery store--they even came with a yummy wasabi ranch dip! 


I made this entire meal in about 10 min. from start to finish! Plus it's really good! To round it out you can add a salad if you want, but the fried green beans count as a veggie in my book! 

To make this vegetarian, substitute rinsed, drained black beans for the chicken. Sliced black olives are also a nice addition, as is diced mango and jalapenos.
